Earlier this week, I promised you pre-race, healthy recipes. Accordingly, in between having nightmares about missing the swim start at Nationals next Saturday, mentally itemizing what to pack in my transition bag, and wondering if I should make a giant tub of customized trail mix for the ride up to Vermont, I am attempting to eat healthfully.
And did I mention taste-fully? Because I have not met a rice cake that I really liked. Though if you have, I am open to introductions.
My latest obsession is smoothies. I've been making them every morning and downing them post-workout. I've got any number of combinations. In fact, I've listed a few, including a Mango Smoothie and my Grady's Cold Brew Coffee Smoothie on this blog.
This time we are going to play with avocados. I've been trying to work healthy fats into my diet. And protein, as I was told I needed more. More than what or who, I'm not really sure...
So for this smoothie, I am throwing healthy fats (avocado) and protein (in the form of a natural flavored vegan powder) into a smoothie.
I must credit my friend Caitlin with introducing me to the avocado smoothie. She made me a fantastic one the other weekend. I've modified it slightly here with some pineapple to sweeten it. But you don't have to if you're sweet enough.
What You Need:
3/4 cup Vanilla Soy Milk
1/2 a ripe avocado (should be slightly soft)
3 heaping tablespoons of non-fat, plain Greek yogurt
2 scoops protein powder (or whatever the serving size listed on the packaging indicates)
1/2 cup chopped pineapple
1 tablespoon Chia seeds (they're good for you - helllloooo Omega 3's!)
1/2 teaspoon vanilla extract (optional)
What You Do:
Do you have a blender? If not, go get one.
Throw everything in the blender (see that's why you need one). Blend until you can't blend anymore. Or until everything is properly mixed up – whichever comes first.
If the consistency is too thick, you can add some water or ice cubes.
Pour into a glass, add a straw and sip away!
